Safety, Sanitation, Cross-Contamination and Kitchen Guidelines

Safety
1. No open-toed shoes, thongs, or flip-flops. (This is meant to prevent burns, cuts or the possibility of having your toe smashed.)
2. Long hair, (below the shoulder) should be tied back, or put up in a bun and secured. (This is meant to prevent your hair from catching fire or accidentally getting into ingredients/food.) Hairnets are available from the House of Bread.
3. Long pants are most suitable for working in the kitchen.
4. Please refrain from wearing excessively baggy or loose clothing. (This is meant to prevent your clothing from becoming caught in machinery, or catching fire.)
5. Always move to the right when hot pans are being delivered to the steam table.
   
Sanitation and cross-contamination
1. Hands should be thoroughly washed before working with food.
2. Hands should be re-washed after: going from one food to another, handling trash, after using the bathroom, after eating, drinking, or smoking.
3. Gloves should be worn at all times while working with food, clean or dirty dishes and utensils, trash, or incoming deliveries.
4. Gloves should be changed each and every time you wash hands (See #2)
5. Long hair, (see #2 under Safety)
   
Kitchen Guidelines
1. Please allow a staff member to clean up any broken glass.
2. Please abide by the portion allotments as directed by the Kitchen Manager for that day.
3. Any questions regarding "what to do" asked by a student volunteer should be directed to the Kitchen Manager for that day.
4. Please keep steam table, cold bar and all prep tables wiped off during serving.
5. Please report any injury/burn to Kitchen Manager immediately.
6. Please report any disrespectful/poor behavior by staff, volunteers or guests to the Kitchen Manager for that day.
